The Mint Tea Ritual

Moroccan mint tea ("Atay") is not a drink โ€” it's a ceremony. Chinese green tea, fresh spearmint, sugar cubes and passion poured from height to create a perfect froth.

1. Rinse Chinese gunpowder green tea in boiling water (discard). 2. Add fresh mint, sugar and boiling water. 3. Pour into glass and back into teapot three times. 4. Pour from height into glasses for froth. Served three rounds: "First glass bitter as life, second sweet as love, third gentle as death."
Etiquette tips

Always accept at least one glass โ€” refusing is impolite. Hold the glass from the top (it's hot). Three glasses is the customary number. When done, leave a little in the glass to signal you're finished. Never pour your own โ€” let the host pour.
